I like them.
I take a lot of extra time to cut out every bit of red meat/fat that I can.
I usually give them a salt water bath or buttermilk bath.
Then it’s cut into cubes and fried!
It’s hit or miss down here. Some people don’t mind it and others won’t touch them.
