Wine and meat preservation

Heard this a couple of years ago from a native American....take any rot-gut wine along when hunting in warm weather. Place your deboned meet into a heavy duty zip lock bag and add your wine. Burgandy?
The acidity of the wine doesn't allow the bacteria to grow and it's nicely marinated for the dinner table.

Sounded logical to me .....but haven't had the op to use it yet.
