I'm about a week from moving out of the PNW and back to the midwest, so it was time to clean out the freezer. I pulled out a few pounds of widgeon, a pound of venison, and some bacon(couldn't find pork fat) and put my new cabela's sausage stuffer to work. After tediously hand grinding the meat(mental note, buy a electric grinder ASAP), and mixing the ingredients, I made my first batch of sausages ever. I fried up a patty of the meat to test first, and it was really, really good. They're resting now, then I'll pierce the air bubbles, and smoke them for an italian feast tomorrow.

Looks great! Making sausage is a fantastic way to turn game into a variety of different distinct crowd pleasers.
