Nick, you can definitely get different flavors from different pellets. Pit boss pellets are a blend of different woods (with a lot of maple) and Traeger adds oils and flavorings to their pellets (at least they did).Hmm. My step dad's traeger has excellent smoke flavor. My pit boss very mild. But that's grill vs cabinet so idk. Biggest thing with pellets I've found is some of them are very dirty as in tons of sawdust in the bag. The suck up moisture real easy that way.

Bear Mountain pellets are made with 100% the type of wood on the bag. So cherry pellets are 100% cherry wood (not 25% like with some) and hickory are 100% hickory. I have found that Bear Mountain definitely have a more defined flavor profile and are a bit closer to a stick burner.
You can also add a cheap smoke tube. I use them for cold smoking and have used them to add more smoke for shorter cooks.
That all being said, my family likes the smoke profile from Pit Boss pellets so I usually just use them because they are cheap and easy to get.
