Wanted : recipe for smoked trout

Brine:
4C Water
2C White wine or apple juice
2C Soy sauce
1/2C Pickling salt
1/2C Brown sugar, packed
1t Onion powder
1t Garlic powder
1/2t Black pepper

Mix brine in a glass or plastic container. Add trout to brine and refrigerate 12-24 hours. A longer brine time results in more intense flavors. I like to smoke mine at 225 for approximately 1 1/2 hours, using apple wood. Enjoy
