Ultimate Wild Game Rub

I found this recipe' for wild game rub in Field & Stream about three years ago and I've been using it ever since. I've been using it on whitetail deer meat for three years and it is good. The venison done with rub goes good with baby red potatoes rubbed with garlic butter and either asparagus or green beans on side. One cooking tip; just before your venison is done, pour glass of cognac or brandy to enjoy with meal.



Ultimate Wild Game Rub

1/4 cup kosher salt
1/4 cup ground black pepper
1/4 cup sweet paprika
1 tablespoon brown sugar
1 tablespoon granulated sugar
2 tablespoons dried thyme
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon juniper berries, crushed and minced
1 tablespoon cayenne pepper

Juniper berries work well in game rubs. Emeril Lagasse had one similar to this on he TV show several years ago. It was called "Pastrami Spice-Encrusted Venison with Huckleberry Ketchup". I made some and it went over very well. It was good cold, too. I didn't bother with the Huckleberry Ketchup. If you don't have access to Juniper berries, try Penzey's Spices on the internet.
