Just tried this one this evening and it turned out pretty good.

Cut breast, across the grain, into 1/2” pieces. Toss in flour and brown in skillet with 1/4 stick butter. Set aside.

Cut up 1 med sweet onion, course, and cook it with 1/4 stick butter for 4 minutes. Add 1/4 cup broth and 1/4 cup white wine, deglaze pan.

Add turkey, 1/8 tsp thyme and rosemary, and simmer for 20 minutes. Add water and flour to thicken or make more gravy.

Serve over basmati rice.

Forgot to mention: I did a basic brine for 8hrs. 1g water, 1 cup salt, 1 cup brown sugar.

Turkey was so tender and juicy that I just wanted to munch on the browned turkey nuggets while the sauce was cooking.
