Tried a couple new things while my boys were home for Christmas break. I had never eaten beaver. It was pretty good cooked like pot roast and served over rice. We also cooked, skinned and ate the tail which is pretty much all fat. I can see why mountain men liked it. Did some goose hunting so we also took a stab at goose pastrami. It is excellent. I trapped a few nuisance beaver a couple years ago and cooked them up. I served them at "card night" at my grandpa's house. Grandpa was starting to get a little confused and it wasn't until after he went back for seconds that he realized what he was eating. I will never forget the look on his face for as long as I live! It was very tasty, though.

Your goose pastrami looks awesome!!
 
That goose pastrami looks awesome. If it taste half as good as it looks I could take up goose hunting
