A related question, for those that cut up the meat on their own...Do you guys usually do this in camp/wherever you are staying, or do you usually transport the quarters home and process there?
I quarter the animal out, remove backstraps/tenderloins/rib and neck meat, cut off the lower legs, put them in game bags and put it on ice until I get home. Its a lot easier to process them from my shop at home for me.
 
Did prior elk in my camp trailer, did this one in the kitchen of the Airbnb I was staying in.
I take a vac sealer for backstraps, roasts and tenderloins, then freeze in freezer. Everything else gets chunked, taken to processor for grind, wrap, freeze.
If hunting local I do as Adam does above.
