Potato Soup

1 Lb Bacon (chopped)
2 Stalks Celery (diced)
1 Onion (Chopped)
3 Cloves Garlic (minced)
8 Potatoes (peeled and cubed)
4 Cups Chicken Stock
3 Table Spoons Butter
¼ Cup Flour
1 Cup Cream (heavy)
1 teaspoon Tarragon
3 teaspoon Cilantro
Salt and Pepper to taste

Cook bacon over medium heat, remove bacon (do not drain)
Sauté celery, onion, garlic, add potatoes
Toss to coat, sauté 3-4 minutes
Return bacon to pan, add stock to cover, simmer till potatoes are tender
In separate pan, melt butter over medium heat
Wisk in flour, cook stirring constantly for 1-2 minutes
Wisk in heavy cream, tarragon, and cilantro
Bring to boil and cook, stirring constantly till thickened
Add cream to potato mixture, puree about ½ the soup mix and return to pan
Add seasonings to taste
