The fish was literally 5 simple ingredients plus seasonings.

One filet was enough for 3 nice meals!

My charter captain thought I was nuts to keep this one when we were pulling in lots of big snapper but I had a plan. This is a recreation of a dish my wife loves from a Asian restaurant we like. It was really good but the braising sauce didn't thicken right after I removed the fish and added the cornstarch slurry the flavor was spot on just not the consistency. Not sure what I did wrong maybe more cornstarch maybe it needed to reduce more? Either way it was a nice in-house date night meal even got to watch fishing while eating.

Even snagged the kids cereal bowl to throw the fish bones into. Hope I remember to wash it out I can hear the conversation now.

I'd kill for a Applebee's date night! The new kid will be 2 weeks tomorrow I won't be getting her away for even a DQ shake without him for awhile.
