Nerding out here a bit.

I make a pretty solid effort to take good field photos for every animal I’ve taken.

Until recently just an iPhone with a tripod and remote. This year Santa brought me a new Nikon mirror less camera and I’m wanting to step my game up a bit.

Anyone else dabble? Tips and tricks? Set to auto and forget it?

I’ve gone the opposite direction, from DSLR to almost exclusively iPhone now, for no other reason than I have it on me when opportunities come up. But regardless, you’ll be much happier with your photos if you learn the settings and how to use them rather than shooting on auto. Controlling exposure, controlling shutter speed, controlling focus and depth of field will give you so much better ability to make the photo you see in your mind. Lots of places online you can start learning, and just get out and take lots of pics.

Bought a Nikon mirrorless in November. YouTube is your friend. Just search your camera model and the subjects you want to shoot (landscape, wildlife, BIF, etc.). Lots of good videos out there. I agree with @Hunting Wife that you will enjoy your results much more if you learn how to use your camera.
