Pheasant/Turkey Sausage suggestions?

I've got a good stash of pheasant and a turkey breast or two in the freeze that I need to use up and I was thinking about trying some sausage.
I've done the MeatEater breakfast sausage before and really enjoyed it but am looking to try something else.
Does anyone have any recipes they'd like to share? I'm thinking more a brat/link style sausage more than like a patty, but open to anything.

I do a variation of this (I use cheap bulk pancetta instead of fatback and don’t stuff it into casings, just make patties) with more or less every upland gamebird And turkeys. Always a hit and perfect for sliders in various camps.

 
I ended up making 17 lb of sausage using the recipe that Fishdart shared. They turned out nicely and I am looking forward to sharing them with friends and family.

You're a lucky man to have surplus pheasant.
The dog and I hunt hard for them! We're also lucky to have access to some great private land at times, as well as some world class public pheasant habitat.
