Need Sausage Help

Hi Guys
Need some help here. I have a lot of Moose sausage frozen in bulk form that I want to turn into link sausage as I unthaw it. I went to the local market and got some skins packed in salt. There was no instructions with them and I took a wild guess as to what to do on my first attempt. I took a couple of lengths of skins and soaked them in water? only way I could see to soften them up. And then filled them with meat using a jerky shooter. So is soaking them in water ok? Is there anything else that I missed? I did twist them every 4 inches to make the links(Knew someone would ask!)
