I'm going to go with it taste like Crap..... But I am going for bear number 9 or 10 this spring
+1 I have spent 5 plus days in the wilderness with no meat..and still didnt like the back straps off of the bears.
Is bear edible?

Bears are like pigs... better when they're smaller. I have my entire bear smoked into hams and ham steaks, its pretty good that way...
I think that a late fall season bear that has been eating berries for a while is some of the best meat I've ever had. Very sweet!!! I made the mistake of having a ton of it into summer sausage and pepperoni, which were very good, but the burger and the steaks were awesome.
