Elk is some great stuff ain't it NC
 
Slice into thin cuts (1/4") or so against grain..
Bread in flower and fry, use a little salt and pepper to flavor and fry.
Don't over cook, matter of fact it is best if little steaks are a little pink in the middle.
This is almost the only way I eat elk and deer, and we have it almost every night.. :D
