2 pounds of Elk Roast
1 can of Rotel Tomatoes
1/3 jar of Carne Guisada Seasoning
1 Onion

Cut the elk into 1" cubes and throw it into a crock pot on low with all the other stuff and let it slow cook overnight. Wake up in the morning, throw some tortillas on the grill and Wa'la you have an original mexican breakfast......
 
I'm gonna give that a try today, if I can find the Carne Guisada seasoning. I'll let you know how they taste. Thanks for the recipe.
