Wild Boar Tenderloin with a Brandy, Wild Mushroom Cream Sauce!
I have used this recipe on several of the wild hogs I have killed over the past few years. It is absolutely delicious on wild boar tenderloins and chops. It is also a great recipe for domestic pork.
Ingredients
2 wild boar tenderloins
salt and pepper
pork fat or oil for browning
vegetable oil
carrots
celery
onion
mushrooms
cream
dry sherry
chicken broth
rosemary
