It is the lacy membrane of fat around the internal organs of some critters, deer, elk, moose, and others.I haven't heard of caul fat, what do you do with it, and where does it come from? Thanks
Slam right off the top ropeI'd suggest leaving it in the field with the rest of the guts. Or trim that mustache and down an IPA and flip open Steve Renella's cook book and make something hipster.

You could always use this recipe and wrap them in that caul fat. Sounds amazing. Maybe deep fry in rendered fat?
