I decided to try having some ham made from my spring bear. I just got it back from Willamina Meat and it turned out great! They are a local company that has made us ham and bacon from 4H pigs over the years and since the kids have outgrown 4H I have been craving some of their old fashioned ham.

This is my first experience with bear ham and I am really pleased with the outcome. Flavor is superb! Being as it was an old boar it isn't as tender as a young hog but I will slow cook the big hams with apple cider in the crock pot. Mmmmm!

Total cost was $26! This was one hindquarter from a 300# bear....

They do exactly that. As I understand it they are one of the only places around that still use the old fashioned ham method. Not sure what the new method is??

That is way cheap. A lot of work goes into the curing and smoking.... Never seen anything close to that for prices around here.
