I realize this might sound corny but I am retard when it comes to sharpening any kind of cutting utensil. I have used the 6 inch break off blades utility knifes for years on whitetails. they work great as you can shorten it to do gutting, and you can lengthen for cutting windpipes or diaphrams or cutting the tendons in the hip. they are great to carry as they are so light and cost a dollar. i do carry a nice buck knife in case but rarely use it. surprisingly it doesnt get dull and i dont lose them anymore. so here's my question does anyone else use these for big critters? here is what i use,

No. I am pretty good at sharpening knives. I use the gutless method of breaking down an animal. I carry 3 knives. One for breaking down and skinning. A second for deboning and a third curved knife for removing the filet.

I gutted and butchered a cow elk this last fall almost primarily with a Havalon knife with replaceable scalpel blades. Lightest, sharpest knife I have ever owned. I keep a good heavy bladed knife in the truck and at camp, but when weight is at a premium that is the only blade I carry (with several replacement blades of course).

I usually carry one of those, but now mostly have it as a backup. As you said, the plastic el-cheapo ones are really light, and cheap! With the advent of Havalon and Outdoor Edge knives I don't use the utility knife/boxcutter as often. I will still sometimes use it for cutting elk hide, it works great for that. But for skinning the sharp point on the box cutter type blade is not ideal, so I switch over to something else with a curved blade.
