2025 NM Search for Speed Goats

Very nice guys! Were you hunting public or private with a guide? Maybe one of these years I will get lucky and pull a tag in NM
 
Details on the trip:
23 hr drive back to Western North Carolina.
2819.7 miles driven.
Lowest diesel fuel: $2.89 at Buc-ee’s Amarillo.
Highest diesel fuel: $3.29 at QT in Oklahoma.
Experienced Tropical Smoothie for the first time. It’s one of NorthTurkey825jr’s favorites. I think it fueled him for his goat kill.

Buddy, don't overcook your 'lope steaks! No more than medium rare, with maybe a little chimichurri drizzled on top.

Did you save the liver? Made some fantastic boudin out of my last one.

They may have been the lighting. These were for sure medium rare. Just the way we like it.
No sir on the liver. Never have but will have to try next time.

Good man. Recipe works almost as well with whitetail liver. I use Hank's boudin recipe (https://honest-food.net/cajun-boudin-sausage-recipe/) but form into golf-ball sized balls, dip in egg wash, panko breadcrumbs and deep fry until golden brown. Mix some habanero cheddar into the boudin if you want to get real frisky with it.
