    A lot of that bull wound up as hamburger but I still have 2 cow tags. The calf population is going to be hurting.

    Butcher Knives

    I am curious for those of you who do your own processing what knives do you use? I use a Cutco boning knife as well as a J A Henckels boning knife. I also use and old no name chefs knife my grandpa gave me to cut steaks. And of course a steel to keep them all sharp.

    I enjoy horn porn just as much as the next guy. The other night when I was cutting up my elk it really hit me why I really do this. Even though the steaks off this bull are pretty tough he sure will feed my family well.
