Spatchcocked a whole chicken and finished with some white sauce.

I let the bacon dry and equalize before slicing. Turned out well.

Loved it, between brockels shoulder recipe and the one you gave me for this. I don't know if I'll debone anything anymore lol. Cooked quicker than I thought, but man was it tender. I brined it and then injected with the brine before it went on the smoker.

We pretty much all agreed it tasted like a giant dove breast.

Finally had the perfect combo of free time and good weather, decided to do a brisket for the first time in a while. This is the early result. Sad part is, I was done trimming the brisket, this was done cubing fat to be rendered

Just wrapped the pork belly gonna let it go another 1-2 hours. Then cube and coat with sauce and back on another 30-60 minutes.
