Wanted: Tips and tricks for doing euros

I had a stag die from malignant catarr fever, hacked the head off and dumped him in a plastic bucket, that was about 3 weeks ago and when i went to chck him yesterday the nose part was clean and the rest looked like being well on the way to dissolving. Juat water nothing else. Will update as we go along.
I did that with a deadhead last year. Changed the water once but just kind of forgot about it. Didn't really care how it turned out, wasn't going for clean white as it was going outside. Cane out pretty good compared to how it was when I found it.

Cheap cooler, immersion circulator (sous vide machine), dishwasher soap, 145 degrees for 36-48 hours, electric pressure washer with rotohead, 40x peroxide paste, let it sit for 2-3 days in the sun.

About 30min hands on work. Looks like it belongs in a museum and no pots to watch.

Never going back.

Simmer, pressure wash, repeat till clean. I put Arm and Hammer liquid laundry detergent in the water. After drying, I coat volume 40 developer and let it sit for a day, then rise good and it's done

This guy was done in a very similar method. Obviously an extra step to get the horns off but other than that almost identical.

I think it’s whiter in real life than it looks. This one is 2 years old or so I think.

I’ll get some tomorrow. My experience is a long sous vide cook degreases much better than simmered.

You can always do another lower heat clean water cycle after the pressure wash before the peroxide. Freshwater, more dishwasher detergent, and 24 hours at 125-130. It won’t cook the bones or hurt cartilage, but will degrease.

I usually degrease around 120ish. Takes me a lot longer than 24 hours to get all the grease out though.
