I had a couple greenwing teal that needed to be cooked but it was pouring rain so I had to twist Hank's recipe a bit here for grilling.

I spatchcoked the birds....yes, whenever you spatchcock a bird it's like being a crossfitter, vegan or creedmoor shooter, you must tell everyone.

Roasted them at 525 for 10 minutes and scarfed them down like I just ended a hunger strike....also known as Tuesday night dinner.

With a pan full of fat drippings from the birds, I did the sensible thing and then pan roasted pronghorn tenderloin in it. It was most delicious.

So, if you have some fat little birds try and give this one a shot.

No fancy plates or served with wine?
 
That is definitely my favorite way to cook teal. I'll have to try the spatchcock next time.
 
Jealous. I killed a nice big ol greenhead not too long ago and the damn thing barely had any fat on it at all. It was still delicious but I was surprised by the lack of fat on it.
