School me up on these. What makes a good serving tool and what makes a poor one? Same with serving itself. Any major things to look for in material other than size?

Don't overthink serving tools/jigs. The most important thing is that they hold tension at a consistent level. AAE Pro, Beiter or Bearpaw are all fine. For serving material there are 2-3 different materials that you will use. BCY Powergrip or 62XS for center servings in .018, .021 or .025 diameter. BCY Halo .014 for end servings through the cam track and a spool of BCY 3D is great for serving peep sights or tie on nocks.
