Good point. I had a hamburger a few weeks ago that had bacon ground into it...I think I gained 4 lbs eating it but it was totally worth it!

I add some of that to my summer sausage batches. Adds a great flavor and like you said it is more fat than not.

Yep, I get bacon fat when possible. Pork belly works if available.
5% for burger mix and 5-10% for sausage. I like adding pork meat too so a Boston butt or pork shoulder get used.
I have used sirloin fat for burger.
