Don't overlook large boxed Bacon Ends and Pieces. I used to buy 10# boxes for $15. John

I add some of that to my summer sausage batches. Adds a great flavor and like you said it is more fat than not.
 
Yep, I get bacon fat when possible. Pork belly works if available.
5% for burger mix and 5-10% for sausage. I like adding pork meat too so a Boston butt or pork shoulder get used.
I have used sirloin fat for burger.
 
Bacon burger-12 pounds wild, five pounds greasy hamburger, three pounds bacon, all ground together for the best burgers in the world. High temp cheese and jalapenos can be added for additional flavors.
