Paddlefish on the Upper Missouri... who's going?

My first year actually applying for this. I've got the equipment and have been ready to do it, just never had the time. I'm going to make time, this year.

Who else is going ?
 
If I draw I’ll be up there. Kinda different having to apply for a paddlefish tag, used to just buying it at the store.
 
What do you guys do with the paddlefish? Caviar? Steaks? I have no experience with them.
Well I have worked at the Confluence and Intake doing both processing and making caviar. Im not sure you'll find much of any sort of quality caviar being made up on the Missouri as its just to far to pipe in the proper facilities to make a quality product. But I have mainly fillet them and have steaked a few fish. Still trying just how to make the best paddlefish.

Made caviar at home a time or two not bad. I've tried to cook it a bunch of ways at it's best it's barely ok. In Oklahoma you can buy a tag OTC but the moment you keep a fish your done fishing so now I throw them all back unless the fish is injured and doesn't appear that it'll recover.
