After the adventure I had in Newfoundland:

Newfoundland Moose Hunt

I didn't want anything to go to waste so one of the items I brought home in my carry on bag was the tongue! Initially inspired by the folks at Meateater and then used a recipe from Hank Shaw:

Venison Lengua Tacos

Before:

After 40 minutes in my Instant Pot pressure cooker and peeled:

Cut into chunks and seared:

Diced into taco size bits and fried/seared some more. I really liked the texture on the seared bits:

I have a bunch of caribou tongues in the freezer than I have been meaning to use... thanks for the tasty reminder

Nice work. I've got a moose tongue I've been saving.... Maybe I need to just cook it up now.

Funny story, my daughter (5 or so at the time) once told me to just call it "lengua or meat, not tongue". It made it taste better she thought, as she ate half the elk lengua I had pickled for a dinner party.
 
Love some lengua (no joke intended but will take any I can get!) used to save all I could get when customers didn’t want em at my uncle’s meat/slaughter house. Would definitely save a moose’s.

Not worthy of its own post but heres a picture of tonights grilled heart. Soon to be joined with onions and mushrooms in gravy

Got a recipe for that taco sauce? I'm thinking that might work well for some goose I collected yesterday.
