Helloooo from Louisiana

I've lived all over the state. Currently I live near Shreveport, but I grew up near Natchitoches. And lived in Baton Rouge for 9 years as well. Thanks for the welcome!
 
I can contribute on most Louisiana recipes. "LaSportsman" comes from Louisiana Sportsman/Sportsman's Paradise.

Gumbo: Gumbo is very regional. I grew up on chicken and sausage gumbo. Seafood gumbo is more coastal. Cajun way is to live off land and whatever is local goes in the pot.

Best recommendation is Chef John Folse's Encyclopedia of Cajun Cuisine. Recipes that I grew up on match pretty close and I've learned lots of others. Navy has me traversing the world so I've had to learn to make things that you just go to the local meat market and buy in any town in South Louisiana.


Paul Prudhomme's Prudhomme Family Cook book is second best on my shelf.
