Duck Bacon

I've been meaning to try this for awhile and glad I did with some plump mallards I shot over New Years. I followed the DU recipe pretty much, but added some maple syrup and glazed with maple syrup while smoking. You are missing out if you don't try this at some point.

Hope you used REAL maple syrup (preferably from Vermont)... not that fake corn syrup crap sold in stores.

one of my favorite go to apps. I do about the same, glaze with real maple syrup reduced down and sprinkle with sea salt. Then slice and fry. First time made it my neighbor walks in and asked what I was making bacon for. Get fancy do a cracker some goat cheese, duck bacon and some thyme on top. very good and fancy presentation. I did these for mothers day and added a piece fried morel.
