Not buffalo as in tatonka, but as in wings. Always looking for new uses for elk meat that are crowd friendly, I stumbled on Hank Shane’s buffalo meatball recipe.

Below is my take on it. In short it was awesome. I made a bunch of meatballs and only sauced enough for a meal. The rest of the balls are staying more generic and will be used in other formats including spaghetti and meatballs and sweet and sour meatballs with rice.

Did you put some sauce in the burger mixture to add layers to the flavor, or just sauce them?

Also- when it comes to the debate of Ranch vs Blue Cheese, remember what Uncle Joey says
Just the sauce. If I made them again and was doing JUST buffalo balls, I’d make some alterations. Such as blue cheese instead of Parmesan, hot sauce in the meat mixture, cayenne, etc.

However, I wanted a meatball for multiple applications so I just followed Hank’s recipe for the most part.
 
My wife makes great sriracha meatballs if you want a little more spice.
