Grilled up my first package of burger off my bear this evening and I cannot belive anyone would make it into sausage. Way better than deer burger IMO.
 
Fall or spring bear?

I don't get the sausage thing with any wild game. Deer tastes like deer, bear tastes like bear, and antelope tastes like antelope.
 
I just took a bear in Maine last week...Just under 300 lbs on a friends family property. Bear meat can be tricky to make enjoyable. First you need to cut every oz. of fat and tendon off the meat. Next ,as with all game salt the meat. If you are making a stew or going to grind to make sausage or burger take what ever cut of meat you are working with , cut it up into cubes and salt the meat liberaly with kosher salt. Place it in a strainer over another bowl and let it sit for a few hrs. in the refridgerator. This will leech all the blood out of the meat as well as the gamey taste.When you take the meat out of the refridgerator rinse the meat throughly to remove all the salt. You will not have a salty taste to the meat. I made a bear stew last weekend for some friends and didnt tell them what it was. They were licking the plate looking for more ......good luck...any questions PM me.....:cool:
 
Bear vary so much from one to another. You must have got a good frost one. I tasted some made into sausage that was not good.
 
Anyway I prepare my spring bear...burger, sausage, steaks, roasts, or jerky...It's the best meat of the year.
