The Red deer has the strongest tasting venison with the Roe deer having the least tasty but most tender venison. My preference for eating is Sika or Fallow as its still flavourful but tender, and Sika and Fallow do very well on poorer ground so they often have much more fat than Red or Roe...- deerstalker0797
