    Takes only 3-4 days in my dehydrator, so I'm curious if it will be noticeably differenct if hung. I also just test doneness by squeezing rather than weighing.

    I haven't had an issues with the meat spoiling, not even mold. The vinegar and salt prevent it. It also does stick around long enough to go bad, haha.

    I've been making a bunch the last few years. Way more than jerky. Love it. This is the recipe I tend to follow the most. https://www.greedyferret.com/perfect-biltong-recipe-south-african-beef-jerky I use a dehydrator, but I turn the heat all the way off and just have the fan blowing on it.

    Where did you hit it the first time? I've had it happen once with an antelope. Had it happen to a buddy too. He put gun away and then walked up to it only to have it jump up and run off, looking fine.

    Yep definitely plenty of good snacks. My daughters (13 and 15) are going antelope hunting with me this weekend. Even though they have tags of their own and are hunting, their primary concern still is having good snacks :LOL:
