What tells you a butcher is "Good with Bear Meat"?

I have a good shop in town here that makes good sausage and cut and wraps my Elk and Deer and our ranch killed beef, and fair hogs.

I had another hunter tell me I should use a different butcher closer to the area I'm hunting bears in 100 miles away. That he was "better at bear" Apparently he corns the meat.

Is there a particularly different skill set for preparing bear meat for the freezer? What are some unique cuts or value added products bear is well suited for?
 
I can't really imagine what a butcher would do that was better with elk versus bear, I would think the major variance would be with the cook.

Corning it's going to kill tric... BTW and you can corn elk, so I'm not quite sure what that hunter is talking about.
