In the walleye world, we call them wings instead of throats. I'm sure there has been guys keeping them for decades, but they've started to gain popularity in the last few years. Super good chunks of meat that can be used as an appetizer. I like to keep and bag up all my wings separate from my fillets and when I have a good stash I'll fry them up in a big batch when were eating something else other than fish to add to the diversity of the meal. They're easy to take off the fish and they taste great.
