NM javelina

Congrats, good looking javelina and they taste just fine. Take care of it correctly and they are good tablefare. They are just small, so I usually make a small batch of chorizo or something ground, but have made some small steaks and they were good also. Some folks talk about the gland on the back, but it is on the skin, so I'm not sure why they seem to struggle with it :)
