Freeze dried meat

A buddy got a freeze drier to do long term storage. I'm wondering how freeze dried meat would be after rehydration? It doesn't seem to me that all the flavor would be there?
 
Ever had a dehydrated meal, ala mountain house, peak, backpackers party, etc.?
Probably some kind of learning curve doing it yourself, but I’m sure it’d be fine.

If I do freeze dried meat for long term storage, the flavor is not important to me if I have to use it.

The fact that I have it is what's important.

Ive had some from a friend thst has the harvest right. Pretty good.

Another used the same to make various meals, such as spaghetti and stew.

Tasted fine to me.
 
I haven't done it myself, but I get the cans of MH chicken and ground beef and make my own meals with them. Cuts the price in half over the cheapest all in one meals, and I can put more meat in them.
If flavor is an issue, add some seasoning.
Chicken and Ramen
Beef and Knor rice sides, taco, mexican, etc. (add taco seasoning)
Beef and Instant mashed potatoes(add gravy mix/bouillon)
 
We do ham and it’s fantastic. You’ll be very surprised how good it turns out. We just take a whole ham and slice it up. Rehydrates easily.
 
The finished freeze-dried product will be very susceptible to moisture, it will need to be stored in a manner that protects it from the humid environment. Water activity testing will be useful to verify the shelf stability.
