Elk Backstrap

I have been hoarding and coveting the backstraps all year, not wanting to break them out because I didn’t want to use them up too soon. Man, was that dumb. Tonight, we had backstrap grilled using Hank Shaw's method here:

The butter beans were grown and canned by us, and the tomatoes came from the back yard. This was an all around terrific meal, and my girls liked it so much I think the rest of the backstrap packs will be short lived.

Looks awesome! Had this (along with a bunch of other wild game) over at a friends house last year for a Christmas party; right then I decided what I was doing with my next backstraps

Best elk photo I've seen in a while! :)
After finishing off my last elk backstrap last weekend, this pic makes me kinda sad! How am I going to make it until the next?:(

Got a couple peices of backstrap from my cow left so that pic makes me want to break one out.
