American cheese additives

Was going to make some homemade american cheese. Has anyone ever added extra ingredients, green chiles etc.?
 
Oh man, I’ve never done it but I’d bet some chopped up pickled jalapeños would be awesome. I wouldn’t get too baroque with it. Keep it simple. And feel free to send some my way.

Haha. I'm definitely keeping it simple, just a little something to zest it up, pickled Jalapeños would probably be perfect. Try it sometime, it's ridiculously easy with no weird additives.
 
It’s called pepper Jack cheese then.
It's different. American cheese is just shredded hard cheese, liquid, butter and sodium citrate, it takes whole milk, rennet and cultures to make Monterey jack. I could probably just mix shredded pepper Jack into the pot and give it some zing
