Just my experience, but I've had good luck with Hornady factory ammo. 140 Gr Interlocks shoot well out of my Tikka .270 and I've shot a bunch of deer with the bullets and had great results.
I think you're fine. I lapped more than that off a set of rings and everything worked fine. The rifle sighted in with no problem, and it holds zero, really well. I used what appears to be the same kit with the honing bar, lapping paste and the two pointed shafts to check alignment in all planes.
I have the same Eskimo insulated ice fishing hub, and I used it for elk hunting in WY one year. It worked well. I heated it with a propane buddy heater and left a vent open, the same way I do for ice camping. Hope it works out for you too.
