    I started eating Catfish right out of College when I worked in Louisiana , Arkansas and Mississippi. I grew up in Ohio in the 70s so not much good catfish in my area at that time. I just never had it. I got spoiled in those three states. Almost every place you go there had great catfish.

    Lots of variations. But mayo, mustard, ketchup, horseradish , lemon juice, hot sauce…. The list can go on forever. I make a simple one with mustard , mayo, ketchup and hot sauce.

    I usually make a remoulade but went with some Blue Plate mayo on this on. I shredded up some cabbage instead of lettuce. I like a crispy poboy so I cut up my fillets (2 on this one)so I could get more crisp. It made it a bit harder to eat than just a whole fillet. I managed.

    Its more about the view where your drinking it than the method of brewing it. I used a percolator over fire, french contraption. I now use a drip in the comfort of my cabin. Fill up my old Stanley for long morning or my Yeti tumbler for a short run. Tastes about the same to me.
