The more bikes I see, the more signs limiting them I see. The problem from a hunting standpoint is they decrease the huntable area as more of an overall area becomes the part bikers try to travel past to get away from one another.

Shooting game isn't the same as shooting targets. Competitive shooting against others AND the clock help, but it's still not the same. Take your bow after small game and varmints.
It needs to shoot well enough to place shots to the end of your ability. For most people that's about 1/2 MOA. Keep in mind that it's not always the target you have to hit as much as the gap you must thread the bullet through to get to the target.
Most any cartridge will handle a high shoulder shot just fine. Bigger cartridges may help if you miss your mark a little, but if you can hit it there's no reason to go bigger than 223 for that. People do it with 22 Hornet. 243 be fine.
