As long as you cook it at low temps (200-225) and pull it at 118 or so for medium rare you'll have pretty uniformly cooked meat as there won't be too much carry-over; high temps overcook the outer meat.
60s-70s, but it wouldn't have mattered; our income was so low we couldn't have serviced any debt. Lots of us here grew up poor, and lots of us didn't, but we wound up at the same place anyway and supposedly it builds character. There were times when I felt I could do with a lot less character 🤣.

Pretty simple. Prime rib has been left uncovered with coarse Kosher salt for two days now, ready for pepper. Garlic mashed potatoes, au jus, grilled asparagus, baked garlic, potato bread. Cheesecake if we get to it.
