They brine it then smoke it. It turns out nice. Works perfect in a pie. I’d definitely recommend giving it a try. I’ve not asked if they do anything besides smoking turkey.- NEWHunter

Yeah, had to get the bird cleaned up in time to drop it off at Maplewood Meats for smoking before they closed (2 pm) for the weekend.
